Chessy Garlic rice

Ingredients: CULINARY corner

Garlic cloves …………………………….  2 Butter …………………………….      4 tbsps Basmati rice ……………………….   1 cup Water (hot) …………………….. 1 1/2 cups Milk ………………………………..      1/2 cup Parmesan cheese ………………..1/2 cup Cream …………………………….       1/2 cup

Refined Oil ……………….              2 tbsps

Mushroom Sliced…….               1 cup

Parsley……………………..               1/2 cup

Salt…………………………..             To taste.

 

Method

Wash and soak the rice for 20 minutes. Heat two tablespoons of butter in a medium pan and sauté the garlic until aromatic. Add the drained rice and salt, and stir. Pour in the water and the milk. Bring the mixture to a boil, then reduce heat and simmer, cover and cook until the liquid is completely absorbed and the rice is cooked. Stir lightly and then remove from heat. Mix in the remaining butter, the cream and the cheese. Cover and leave the rice to stand for a few minutes. Heat oil, in a frying pan, over medium heat. Tip in the mushrooms and cook over high heat, until they are golden. Add the mushrooms and the oil to the rice. Garnish with the parsley and serve immediately.
